In case you missed it, Matt & Marie’s was honored to have the Testarossa sandwich named as a top Philadelphia roast pork sandwich by Visit Philly (article here). The Testarossa is one of our favorite sandwiches. It took us over a year to find a roast pork recipe that we liked. Here are some fun facts about the Testarossa sandwich:
- The sandwich was initially ran as a special with the plain old name Philadelphia Roast Pork Sandwich. It was so popular during it’s run as a special, that people demanded we add it to the menu. Many of our regulars had it every day for the 15 days it ran as a special!
- The name Testarossa was chosen by our customers! Philadelphia Roast Pork Sandwich wasn’t going to cut it. So we put up a sign asking people to vote. And Testarossa was the big winner.
- Testarossa means redhead in Italian. Our redheaded manager “Little Matt” is very proud of that.
- Matt and Marie spend a lot of time thinking about the flavor profiles of every sandwich that runs as a special. That wasn’t the case for the Testarossa. Matt just said, what if we put all of our favorite ingredients on top of the pork? And thus, pancetta, sharp provolone and pepperoncini aioli ended up on the sandwich. The sandwich was good, but still missing something – so we added a South Philly Italian sandwich classic – the roasted long hot pepper.
